Cheesy Chicken Artichoke Casserole


This is one of my top 5 favorite recipes.  It never seems to make quite enough.  I could eat this for days in a row! And the leftovers are at least as good, if not better, than the original.

4 Tbsp butter
4 Chicken breasts
14 oz can chicken broth
7.5 oz can artichoke hearts (drained)
dash salt
1/4 C flour
3/4 C whipping cream
1/4 tsp salt
1/8 tsp pepper
1/2 C grated parmesean
1/2 tsp rosemary

Cook chicken in simmering chicken broth for about 30 minutes.  Drain broth, reserving 3/4 C.

Cut chicken into cubes.  Place chicken and artichokes in a greased 8x8 dish.  Lightly salt.

In saucepan, melt 4 tbsp butter.  Add flour and stir.  Add cream and 3/4 C reserved chicken broth.  Stir constantly over med. heat until thickened.  Stir in 1/4 tsp salt, pepper, parmesean cheese, rosemary.

Pour over chicken and artichokes.  Bake at 325 degrees for 30 minutes.
